结构色响应型食品智能包装的研究与应用进展

Research and Application Progress of Structural Color-Responsive Food Intelligent Packaging

  • 摘要: 结构色响应是利用结构色材料受到外部因素导致的晶体结构变化实现对光的干涉,从而产生变色响应,基于此,可以设计出各种响应类型的食品智能包装,实现对包装内食品的品质和包装环境状况的可视化和实时监测。本文分别对温度、机械、湿度、气体和pH导致的结构色响应型食品智能包装的原理、应用场景及研究现状进行综述、总结和分析,同时,对结构色响应型食品智能包装所面临的挑战进行分析,并对其发展方向进行展望,以期为促进基于结构色的食品智能包装的进一步研发与应用提供参考。

     

    Abstract: Structural color response is the interference of light caused by external factors on the crystal structure of structural color materials, resulting in color change response. Based on this, various response types of food intelligent packaging can be designed to achieve visualization and real-time monitoring of the quality of food and packaging environment inside the packaging. This article reviews the principles, research, and application progress of structural color responsive food intelligent packaging caused by temperature, humidity, mechanical stress, gas, and pH. At the same time, it analyzes the challenges faced by structural color responsive food intelligent packaging and looks forward to its development direction, in order to provide reference for promoting further research and application of structural color based food intelligent packaging.
