微胶囊化花色苷及其生物可及性与生物利用度研究进展

Research Progress in Microencapsulated Anthocyanins and Its Bioaccessibility and Bioavailability

  • 摘要: 花色苷是一种天然的多酚类物质,具有多种生物活性。花色苷的结构易受到pH、光照、温度等环境因素的影响而发生变化。在消化过程中花色苷的稳定性和生物利用度较低,限制了其实际健康效益的充分发挥。微胶囊化是提高花色苷稳定性的有效方法,可以通过单一壁材或多种壁材复合对花色苷进行包封,以改善花色苷的稳定性和缓释控释效果。本文概述了花色苷的结构、稳定性影响因素及调控策略,总结了花色苷微胶囊的壁材种类与制备方法,论述了花色苷的生物可及性和生物利用度研究进展,为花色苷的进一步开发利用提供参考。

     

    Abstract: Anthocyanins are natural polyphenols with a wide range of biological activities. The structure of anthocyanins is susceptible to changes caused by environmental factors such as pH, light, and temperature. The low stability and bioavailability of anthocyanins during digestion limit their full potential for achieving health benefits. Microencapsulation is an effective way to improve the stability of anthocyanins. It is possible to enhance the stability and prolong the release control of anthocyanins by encapsulating them in single wall or composite wall. The structure, stability-influencing factors and regulatory strategies of anthocyanins are summarized in this paper, along with the types of walls and preparation methods of anthocyanin microcapsules, and the state of research on the bioaccessibility and bioavailability of anthocyanins. This review may serve as a guide for the future research and application of anthocyanins.
