高光谱成像技术在食品品质检测中的研究进展

Research Progress of Hyperspectral Imaging Technology in Food Quality Detection

  • 摘要: 食品质量安全问题受到世界各国的广泛关注,消费者和企业迫切需要更快速且无损的检测方法来评估食品的品质变化和安全性。高光谱成像(Hyperspectral imaging,HSI)技术作为一种无损检测手段,近年来在食品品质控制中发挥着重要作用。HSI能够获取样品丰富的光谱信息,结合化学计量学和计算机建模技术后可实现食品品质多维分析,为食品质量的评估提供参考。因此,本文介绍了HSI的基本原理、系统组成和数据处理方法,总结了其在食品加工和保藏过程中品质检测的应用进展,并探讨了该技术现有的不足及未来发展趋势,以期为HSI技术在食品行业中的进一步研究和应用提供参考。

     

    Abstract: Food quality and safety have become major global concerns, driving the urgent demand from both consumers and industry for rapid, non-destructive methods to assess quality changes and ensure product safety. Hyperspectral imaging (HSI), as an emerging non-destructive technology, has shown great promise in food quality monitoring in recent years. By capturing abundant spectral information and integrating it with chemometrics and computational modeling, HSI enables multi-dimensional analysis of food quality, offering a scientific basis for quality assessment. Accordingly, this review introduces the fundamental principles, system components, and data processing techniques of HSI, and summarizes recent advancements in its application for quality monitoring during food processing and storage. Furthermore, it discusses current challenges and future development prospects, with the aim of providing a reference for future research and broader application of HSI in the food industry.
