天然提取物对富硒酱板鸭预制食品腥味的影响与保鲜效果初探

A Preliminary Study on the Effect of Natural Extracts on the Off-Flavors of Preserved Foods Made from Rich-Selenium Duck Breast and Their Preservation Properties

  • 摘要: 为提高丰城麻鸭的营养品质与商品价值,本研究利用β-环糊精、酵母粉、紫苏叶作为浸泡液对富硒酱板鸭进行脱腥处理,以腥味值为指标,气相离子迁移谱(Gas Chromatography-Ion Mobility Spectrometry,GC-IMS)辅助分析;另外,通过单因素探究不同浓度乳酸链球菌素(Nisin)、茶多酚和抗坏血酸浸泡液对富硒酱板鸭的挥发性盐基氮(TVB-N)、pH的影响,再通过响应面优化其工艺参数。结果表明:经0.5%酵母浸泡液去腥优化后,富硒酱板鸭的腥味值减少,关键挥发性组分中2-甲基丁醛、2-丁酮等不良风味与腥味、脂肪味具有相关性,乙酸乙酯、丙酮等较好风味物质与水果香、薄荷具有相关性,脱腥处理后显著降低了主要呈腥物质2-甲基丁醛含量,且提高了良好风味物质含量。另外,通过响应面得到最佳复合保鲜剂配比为0.08% Nisin、0.21%茶多酚、0.25%抗坏血酸,在此条件下4 ℃时可将富硒酱板鸭肉货架期延长至9 d左右,此时富硒酱板鸭硒含量为0.274 μg/g。酵母粉浸泡液对酱板鸭预制品在去腥方面具有较好的应用性,绿色高效复合型保鲜剂也为酱板鸭预制品的保鲜贮藏手段提供了的理论基础。

     

    Abstract: To enhance the nutritional quality and commercial value of Fengcheng Partridge Ducks, this study employed an immersion solution consisting of β-cyclodextrin, yeast powder, and perilla leaves for the deodorization of selenium-enriched dry-cured ducks. The fishy odor value was used as the primary evaluation index, with Gas Chromatography-Ion Mobility Spectrometry (GC-IMS) employed for auxiliary analysis. Additionally, single-factor experiments were conducted to investigate the effects of immersion solutions containing different concentrations of nisin, tea polyphenols, and ascorbic acid on the total volatile basic nitrogen (TVB-N) content and pH value of selenium-enriched dry-cured ducks. Subsequent optimization of the process parameters was performed using response surface methodology (RSM).The results demonstrated that after deodorization optimization with a 0.5% yeast powder immersion solution, the fishy odor value of selenium-enriched dry-cured ducks was significantly reduced. Among the key volatile components, off-flavor compounds (2-methylbutanal, and 2-butanone) were correlated with fishy and fatty odors, whereas favorable flavor substances (e.g., ethyl acetate and acetone) were associated with fruity and minty notes. Notably, the deodorization treatment not only significantly decreased the content of 2-methylbutanal (the major contributor to the fishy odor) but also increased the levels of favorable flavor components. Furthermore, RSM optimization revealed that the optimal formulation of the composite preservative was 0.08% nisin, 0.20% tea polyphenols, and 0.25% ascorbic acid (g/mL). Under these conditions, the shelf life of selenium-enriched dry-cured duck meat stored at 4 ℃ could be extended to approximately 9 days, with the selenium content reaching 0.274 μg/g. In conclusion, the yeast powder immersion solution exhibits excellent applicability for the deodorization of semi-finished dry-cured duck products. Moreover, this green and high-efficiency composite preservative provides a theoretical basis for the preservation and storage of semi-finished dry-cured duck products.
