芥末精油Pickering-乳液对冷鲜羊肉的保鲜效果

Effect of Mustard Essential Oil Pickering Emulsion on the Preservation of Chilled Mutton

  • 摘要: 该研究旨在探究芥末精油构建的Pickering乳液用作涂膜液时的保鲜成效及延长冷鲜羊肉货架期的性能,为该类Pickering乳液在肉制品保鲜领域的实际应用提供数据支撑。实验采用芥末精油Pickering乳液对冷鲜羊肉进行表面涂膜保鲜处理,通过测定芥末精油Pickering乳液的抗氧化活性、抑菌性能及羊肉品质指标,考察其对冷鲜羊肉的保鲜效果。结果显示,随着芥末精油浓度的增加,乳液的抑菌效果显著提升(P<0.05),且同一浓度下对不同细菌的抑制效果存在差异;当芥末精油浓度为2.0% v/v时,Pickering乳液具备良好的抗氧化和抑菌能力,对四种致病菌的抑菌圈大小分别为20.20±0.11、19.07±0.06、12.13±0.06和10.73±0.06 mm,对DPPH自由基、ABTS+自由基和·OH自由基的清除率分别达89.45%、66.61%和94.5%。保鲜效果方面,浸泡组和喷涂组冷鲜羊肉的pH、肉色、TVB-N含量、TBARs值、羰基及巯基含量、菌落总数和大肠菌群数等指标均显著优于空白组(P<0.05),其中两组pH在贮藏第28 d仍维持在鲜肉范围内,TBARs值在21 d前处于可接受区间,贮藏期间羰基含量较空白组显著降低(P<0.05);空白组样品第7 d即开始腐败变质,而喷涂组和浸泡组可分别将冷鲜羊肉贮藏期延长14 d和21 d。综上,芥末精油Pickering乳液可有效提升冷鲜羊肉的保鲜效果、延长货架期,其中2.0% v/v浓度的乳液抗氧化及抑菌性能最优,浸泡处理的保鲜成效优于喷涂处理,具备在肉制品保鲜领域推广应用的潜力。

     

    Abstract: This study explored the preservative effect and shelf-life extension of chilled mutton by coating with a mustard essential oil-based Pickering emulsion. It also provided data to support the practical application of such emulsions in meat preservation. The experiment involved applying a mustard essential oil Pickering emulsion as a surface coating on chilled mutton, and the study assessed the emulsion's antioxidant activity, antibacterial performance, and impact on mutton quality indicators. Results indicated that increasing the concentration of mustard essential oil significantly enhanced the emulsion's antibacterial effect (P<0.05), with varying inhibitory effects on different bacteria at the same concentration. At a 2.0% v/v concentration, the Pickering emulsion exhibited good antioxidant and antibacterial properties. The inhibition zones for four pathogenic bacteria measured 20.20±0.11, 19.07±0.06, 12.13±0.06, and 10.73±0.06 mm, respectively. The DPPH, ABTS, and •OH radical scavenging activities were 89.45%, 66.61%, and 94.5%, respectively. Regarding preservation, indicators such as pH, meat color, TVB-N content, TBARs value, carbonyl and thiol content, total bacterial count, and coliform count in the soaking and spraying groups were significantly better than those in the control group (P<0.05). Notably, the pH in both groups remained within the fresh meat range on the 28th day of storage. The TBARs value remained within the acceptable range within 21 days, and the carbonyl content during storage was significantly lower than that in the control group (P<0.05). The control group samples began to deteriorate by the 7th day, while the soaking and spraying groups extended the storage period by 14 and 21 days, respectively. In conclusion, the mustard essential oil Pickering emulsion effectively improves the preservation of chilled mutton and extends its shelf life, with the 2.0% v/v concentration offering optimal antioxidant and antibacterial performance. The soaking treatment outperformed the spraying method, showing potential for broader application in meat product preservation.
