低温等离子体协同紫外处理对冰鲜猪肉的保鲜效果

Preservation Effect of Low-temperature Plasma Combined with Ultraviolet Treatment on Chilled Pork

  • 摘要: 为探究单一等离子体杀菌存在杀菌效果与产品品质难平衡的瓶颈问题,本文以冰鲜猪肉为研究对象,将表面介质阻挡放电(Surface dielectric barrier discharge,SDBD)低温等离子体与222 nm紫外(Ultraviolet,UV)杀菌技术联合应用于冰鲜猪肉的保鲜中,研究其对贮藏期内肉类保鲜效果的影响。本研究通过测定猪背最长肌的冻结曲线确定其冰点,建立(−1.0±0.3)℃猪肉冰温贮藏体系。随后采用SDBD,UV和SDBD+UV的方式处理猪肉并进行冰温贮藏。结果表明,与空白对照组相比,SDBD+UV处理显著(P<0.05)抑制猪肉中菌落总数和假单胞菌计数的增长,有效延缓pH、挥发性盐基氮(Total volatile basic nitrogen,TVB-N)、硫代巴比妥酸值(Thiobarbituric acid,TBARS)和过氧化值(Peroxide value,POV)等理化指标的劣变进程,其中TVB-N值较空白对照组降低56.24%,肉样L*值和含水量分别高于空白对照组的32.48%和61.37%。综上所述,SDBD+UV处理可以有效提高贮藏期内冰鲜猪肉的保鲜效果,有利于提高冰鲜猪肉的品质。该研究为肉类非热杀菌保鲜技术开发提供理论依据和技术支撑。

     

    Abstract: To address the bottleneck issue of balancing bactericidal efficacy and product quality in single plasma sterilization, this study used fresh-chilled pork as the research object, and combined surface dielectric barrier discharge (SDBD) low-temperature plasma with 222 nm ultraviolet (UV) sterilization technology for the preservation of fresh-chilled pork, and investigated the effects of these treatments on meat preservation during storage. Initially, the freezing curve of pork longissimus dorsi was determined to confirm its freezing point, and a supercooled storage system for pork at (−1.0±0.3) ℃ was established. Subsequently, pork samples were subjected to SDBD treatment, UV treatment, or SDBD+UV combined treatment, followed by supercooled storage. The results showed that compared with the blank control group, SDBD+UV combined treatment significantly (P<0.05) reduced the total viable count (TVC) and Pseudomonas count in chilled pork. It also effectively delayed the deterioration of physicochemical indicators, including pH value, total volatile basic nitrogen (TVB-N), thiobarbituric acid (TBARS) value, and peroxide value (POV). Specifically, the TVB-N value of the SDBD+UV treated group was 56.24% lower than that of the blank control group. Meanwhile, the L* value and moisture content (MC) of the chilled pork were 32.48% and 61.37% higher than those of the blank control group, respectively. In conclusion, SDBD+UV combined treatment can effectively improve the preservation effect of chilled pork during storage and is conducive to enhancing the quality of chilled pork. This study provides a theoretical basis and technical support for the development of non-thermal sterilization and preservation technologies for meat products.
