柑橘纤维添加量对金线鱼鱼糜凝胶性能的影响

Effects of the Addition Amount of Citrus Fiber on the Gel Properties of Nemipterus virgatus Surimi

  • 摘要: 为改善鱼糜制品的凝胶品质,本文研究了柑橘纤维添加量(0%、0.5%、1.0%、1.5%、2%)对金线鱼鱼糜凝胶特性和微观结构的影响。结果表明,随着柑橘纤维添加量的增加,鱼糜凝胶的凝胶强度、硬度、持水性和不易流动水含量呈现先升高后降低的趋势,当柑橘纤维添加量为1.5%时分别达到最大值5702.55 g·mm、3577.74 g、89.45%和92.58%,储能模量和损耗模量达到最高值,同时形成了更加致密、光滑和较小孔隙的凝胶网络结构;此外,与对照组相比,柑橘纤维的添加显著提高了鱼糜凝胶的白度(P<0.05),降低了蒸煮损失,促进蛋白质二级结构的展开,使α-螺旋转化为β-折叠。然而,当柑橘纤维添加量为2.0%时,鱼糜凝胶网络结构变得松散,出现较大的孔洞,凝胶的硬度、凝胶强度及持水性相应降低。综上,当柑橘纤维添加量为1.5%时可有效改善金线鱼鱼糜的凝胶特性,为柑橘纤维在鱼糜制品中的应用提供参考。

     

    Abstract: To improve the gel quality of surimi products, this study investigated the effects of adding Citrus fiber at different mass fractions (0%, 0.5%, 1.0%, 1.5%, 2%) on the gel properties and microstructure of threadfin bream surimi. The results demonstrated that as the amount of citrus fiber increased, the gel strength, hardness, water holding capacity (WHC), and immobilized water content of surimi gel exhibited an initial increase followed by a subsequent decrease, and the maximum values of 5702.55 g·mm, 3577.74 g, 89.45% and 92.58% were reached respectively when the Citrus fiber concentration was 1.5%. Both the storage modulus and loss modulus also attained their peak values at this level, accompanied by the formation of a denser, smoother, and finer-pored gel network structure. Furthermore, compared with the control group, the incorporation of Citrus fiber significantly enhanced the whiteness of the surimi gel (P<0.05), reduced cooking loss, promoted the unfolding of the protein secondary structure, and facilitated the transformation of α-helices into β-sheets. However, when the citrus fiber addition level was 2.0%, the network structure of surimi gel became loose, with large holes appearing, and the hardness, gel strength and WHC of the gel decreased accordingly. In conclusion, the addition of 1.5% Citrus fiber effectively improved the gel properties of Nemipterus virgatus surimi, providing a reference for the application of citrus fiber in surimi products.
