杀菌强度对香菇酿肉软罐头品质的影响

Effect of Sterilization Intensity on the Quality of Soft-Packed Stuffed Shiitake Mushrooms

  • 摘要: 本文旨在优化香菇酿肉软罐头的杀菌工艺,以在实现商业无菌的前提下,最大限度地保持其食用与营养品质。本文探究了F值是9、12、15 min,杀菌温度为110、115、121、126 ℃时的杀菌条件对香菇酿肉软罐头产品品质的影响。首先通过测定pH、色泽、质构、感官评分及商业无菌等指标,探究其品质与F值之间的变化规律,确定最优F值。在此基础上通过测定电子鼻、TBARS值、总羰基含量、MRI成像、水分分布、蛋白二级结构以及基本营养成分,探究在相同杀菌强度(F=9 min)下,不同杀菌温度对香菇酿肉产品食用品质和营养品质的影响,旨在确定适合香菇酿肉产品的杀菌条件。结果表明:随杀菌强度(F值)增加,产品pH呈先下降后上升趋势(在121和126 ℃条件下),质构特性(硬度、咀嚼性)先升高后降低,感官评分显著下降(P<0.05),杀菌强度为9 min是实现产品商业无菌要求与优良综合品质协同优化的最佳工艺参数。随着杀菌温度的提高,肉糜中脂肪、蛋白氧化加剧;蛋白有序二级结构(α-螺旋)向无规卷曲转化;挥发性风味物质响应值增大;其中杀菌条件为121 ℃-23 min组不易流动水A22相应峰面积较大,说明截留的水分较多,保水性较好且基本营养成分相比保留较高。综合考虑,121 ℃-23 min的杀菌条件下香菇酿肉产品的硬度适中,感官评分最高,是香菇酿肉产品杀菌工艺的最佳杀菌条件。

     

    Abstract: This study aimed to optimize the sterilization process for soft-pack canned stuffed shiitake mushrooms, maximizing the preservation of their edible and nutritional qualities while achieving commercial sterility. This study investigated the effects of sterilization conditions—specifically F-values of 9, 12, and 15 minutes and sterilization temperatures of 110, 115, 121, and 126 ℃—on the quality of soft canned shiitake mushroom stuffed meat products. First, by measuring indicators such as pH, color, texture, sensory evaluation scores, and commercial sterility, we investigated the relationship between product quality and F-value to determine the optimal F-value. Building upon this foundation, we further investigated the effects of varying sterilization temperatures on the edible and nutritional qualities of stuffed shiitake mushroom products under identical sterilization intensity (F=9 min). Key indicators included electronic nose analysis, TBARS values, total carbonyl content, MRI imaging, moisture distribution, protein secondary structure, and essential nutritional components. This study aimed to determine optimal sterilization conditions for stuffed shiitake mushroom products. Results indicated that as sterilization intensity (F-value) increased, the product's pH first decreased then increased, while textural properties (hardness, chewiness) first improved then deteriorated. Sensory scores significantly declined (P<0.05). A sterilization duration of 9 minutes represented the optimal process parameter for achieving both commercial sterility requirements and synergistic optimization of superior overall product quality. As sterilization temperature increased, oxidation of fats and proteins in ground meat intensified; ordered protein secondary structures (α-helices) transformed into disordered coils; and volatile flavor compound response values rose. The sterilization condition of 121 ℃ for 23 minutes resulted in a larger peak area for the non-flowing water A22 group, indicating greater water retention, superior water-holding capacity, and higher retention of essential nutrients. After comprehensive evaluation, the sterilization conditions of 121 ℃ for 23 minutes yielded the optimal hardness and highest sensory scores for the stuffed shiitake mushroom products, making them the ideal sterilization parameters for this product.
