核桃雄花添加量对馒头品质及营养特性的影响

Effect of Walnut Male Flowers Addition on the Quality and Nutritional Properties of Steamed Buns

  • 摘要: 为探究核桃雄花在功能性主食中的应用潜力,本研究系统考察了添加量分别为1%、2%、3%、4%和5%的核桃雄花对馒头品质(比容、高径比、色差变化、质构特性、孔隙率及感官评价)和营养功能(抗氧化能力、体外消化特性和血糖生成指标)的影响。结果表明,核桃雄花的添加显著影响了馒头各项品质指标(P<0.05)。添加量为2%所制馒头比容最高(2.74 cm3/g),孔隙率28.03%;添加量为1%时感官评分最高(80.4)。随着核桃雄花添加量的增加,馒头的总多酚含量和黄酮含量有所增加,最高分别达到对照组的4.55倍和7.5倍。在抗氧化能力方面,5%的添加量使DPPH自由基清除率和ABTS+自由基清除率分别提升至对照组的3.33和4.36倍,铁离子还原能力也增至对照组的3.75倍。此外,添加5%的核桃雄花使抗性淀粉的含量提升至对照组的2.28倍,并使血糖生成指数(EGI)从75.16降低至68.18。综上,适量添加核桃雄花可改善馒头感官品质,并显著增强其抗氧化与缓消化特性,在开发具有辅助降血糖潜力的功能食品方面具有良好应用前景。

     

    Abstract: This study systematically investigated the potential of walnut male flowers (WMF) as a functional ingredient in steamed buns by evaluating the impact of WMF incorporation at five graded levels (1%, 2%, 3%, 4%, and 5% w/w, based on flour weight) on both quality attributes and nutritional functionality. Quality parameters included specific volume, height-to-diameter ratio, instrumental color, texture profile analysis, microstructural porosity, and overall sensory acceptability. Nutritional functionality was assessed through antioxidant capacity, in vitro starch digestibility, and predicted glycemic response. Results demonstrated WMF addition significantly affected all quality indicators (P<0.05). The 2% WMF group had the highest specific volume 2.74 cm3/g and a porosity of 28.03%, whereas the 1% WMF group had the highest sensory score (80.4). With increasing WMF addition, the total polyphenol and flavonoid contents increased, reaching 4.55 and 7.5 times those of the control group, respectively. In terms of antioxidant capacity, the 5% WMF addition increased the DPPH and ABTS+ free radical scavenging rates to 3.33 and 4.36 times those of the control group, respectively, and the ferric reducing antioxidant power (FRAP) increased to 3.75 times that of the control group. Furthermore, 5% WMF addition elevated the resistant starch (RS) content to 2.28 times that of the control and reduced the estimated glycemic index (EGI) from 75.16 to 68.18. In conclusion, moderate WMF addition improves the sensory quality of steamed bun and significantly enhances its antioxidant and slow-digestion properties, demonstrating promising potential for developing functional foods with blood glucose-lowering effects.
