膳食多酚与面筋蛋白互作机制及应用研究进展

Research Progress on the Interaction Mechanisms and Applications of Dietary Polyphenols with Gluten Protein

  • 摘要: 小麦面筋蛋白是决定面制品加工特性的关键成分,由麦谷蛋白和麦醇溶蛋白组成。膳食多酚因其抗氧化、抗炎等生物活性备受关注,在食品体系中极易与面筋蛋白发生相互作用,从而影响其结构及功能特性,并对食品加工和营养价值产生重要影响。本文从膳食多酚与面筋蛋白的相互作用机制出发,阐述膳食多酚对面筋蛋白结构及理化特性的影响,同时总结了表征二者互作的检测方法以及膳食多酚-面筋蛋白复合物在食品加工及新材料制备方面的应用研究进展。

     

    Abstract: Wheat gluten protein, consisting of glutenin and gliadin, is a key component that determines the processing characteristics of wheat-based products. Dietary polyphenols have attracted increasing attention due to their antioxidant, anti-inflammatory, and other bioactive properties, and they are prone to interacting with gluten proteins in food systems. The interaction can alter the structural and functional properties of gluten, thereby significantly affecting food processing performance and nutritional value. This paper focuses on the interaction mechanisms between dietary polyphenols and gluten protein and elucidates their effects on the structural and physicochemical properties of gluten. In addition, recent advances in analytical methods for characterizing their interactions, as well as the applications of polyphenol–gluten protein complexes in food processing and novel material development, are reviewed.
