拮抗微生物所产挥发性有机物(VOCs)防控采后果实病害的研究进展

Research Progress on the Control of Postharvest Fruit Diseases by Volatile Organic Compounds (VOCs) Produced by Antagonistic Microorganisms

  • 摘要: 水果是人类膳食结构的重要组成部分,但其在采后贮藏与物流运输过程中极易受病原微生物的侵染,造成严重的腐烂劣变与经济损失。传统化学杀菌剂虽防控效果显著,但其残留可能引发环境污染与食品安全隐患。随着消费者对食品健康与生态安全关注度的提升以及日益增长的绿色农业需求,开发绿色、安全的替代性防控策略已成为研究重点。拮抗微生物产生的挥发性有机化合物(Volatile organic compounds,VOCs)因其广谱抑菌性、气相扩散优势及环境友好性,被视为潜在的熏蒸型绿色保鲜剂。本文综述了采后水果常见的侵染性病害,拮抗微生物VOCs的概念、种类、合成途径、主要活性成分、抑菌作用机制及其在果实采后保鲜中面临的挑战与应用策略,以期为基于VOCs的天然防控技术的开发提供理论支撑,推动采后果实病害防控技术的绿色、可持续发展。

     

    Abstract: Fruits are an essential component of the human diet, yet they are highly susceptible to infection by pathogenic microorganisms during postharvest storage and transportation, leading to severe decay and substantial economic losses. While conventional chemical fungicides exhibit remarkable efficacy in disease control, their residues pose environmental and food-safety concerns. In response to growing consumer demand for healthy foods and ecological sustainability, as well as the broader shift toward green agriculture, developing safe, environmentally friendly alternatives has become a research priority. Volatile organic compounds (VOCs) produced by antagonistic microorganisms have emerged as promising fumigant-like, green bio-preservatives owing to their broad-spectrum antimicrobial activity, vapor-phase diffusivity, and environmental compatibility. This review provides a comprehensive overview of common postharvest infectious diseases in fruits, systematically elucidating the concept, types, biosynthetic pathways, and active ingredients of VOCs derived from antagonistic microorganisms, as well as their antimicrobial mechanisms. Additionally, the challenges and strategic applications of VOCs in postharvest fruit preservation are highlighted. By establishing a theoretical framework for VOCs-based natural control technologies, this work seeks to advance the green and sustainable development of postharvest disease management in the fruit industry.
