天然菊芋粉对主食面包烘焙及老化特性的影响

Effects of Natural Jerusalem Artichoke Powder on the Baking and Staling Properties of Traditional Staple Bread

  • 摘要: 为改善传统主食面包的品质并延缓其在储藏过程中的老化,本研究采用不同质量分数(0%、0.8%、1.6%、2.4%、3.2%)的菊芋粉替代高筋面粉制作面包,系统探讨了天然菊芋粉作为功能性配料对面包烘焙品质与老化特性的影响。结果表明,随菊芋粉添加量的增加面包比容和孔隙率均呈现显著上升的趋势(P<0.05),烘烤损失率呈现显著下降趋势(P<0.05),当添加量为3.2%时效果最好,与对照组相比面包比容和孔隙率分别提高了14.3%和46.6%,烘烤损失率降低了29.6%。4 ℃储藏7 d后,面包的失水率由对照组的27.12%显著降至3.2%菊芋粉添加组的15.25%(P<0.05),面包硬度增长明显减缓,由硬度表征的老化速率从1.39 N/d显著下降至0.90 N/d(P<0.05)。差示扫描量热法、X射线衍射及傅里叶变换红外光谱分析进一步表明,添加3.2%菊芋粉可显著抑制面包储藏过程中的淀粉回生,其短程有序性相比对照组显著下降(P<0.05),回生焓值和相对结晶度相较对照组分别显著降低了53.8%和66%(P<0.05)。综上,当菊芋粉添加量为3.2%时,面包烘焙品质的改善及抗老化性能的提升效果最为显著。

     

    Abstract: To improve the quality of traditional staple bread and delay its staling during storage, this study used different mass fractions (0%, 0.8%, 1.6%, 2.4%, 3.2%) of Jerusalem artichoke powder as a substitute for high-gluten flour in bread production. The effects of natural Jerusalem artichoke powder as a functional ingredient on the baking quality and staling characteristics of bread were systematically investigated. The results showed that as the addition level of Jerusalem artichoke powder increased, the specific volume and porosity increased significantly (P<0.05), while the baking loss rate decreased significantly (P<0.05). The best results were observed at an addition level of 3.2%, where the specific volume and porosity of the bread increased by 14.3% and 46.6%, respectively, compared to the control group, and the baking loss rate decreased by 29.6%. After 7 days of storage at 4 ℃, the water loss rate of the bread significantly decreased from 27.12% in the control group to 15.25% in the 3.2% Jerusalem artichoke powder group (P<0.05), and the increase in bread hardness was significantly slowed. The staling rate characterized by hardness significantly decreased from 1.39 N/d to 0.90 N/d (P<0.05). Further analysis using differential scanning calorimetry, X-ray diffraction, and Fourier transform infrared spectroscopy indicated that the addition of 3.2% Jerusalem artichoke powder significantly inhibited starch retrogradation during storage. The short-range ordered structure of starch in the bread with 3.2% Jerusalem artichoke powder was significantly reduced compared to the control group (P<0.05), while the retrogradation enthalpy and relative crystallinity were significantly lower by 53.8% and 66%, respectively, compared to the control group (P<0.05). In conclusion, when the addition level of Jerusalem artichoke powder is 3.2%, the improvement in bread baking quality and the enhancement of anti-aging performance are most significant.
