接种发酵对鱼糜制品关键品质的调控效应及其作用机制研究进展

Research Progress on the Regulatory Effects of Fermentation Inoculation on Key Qualities of Surimi Products and Its Mechanism of Action

  • 摘要: 鱼糜制品因其营养丰富、种类繁多、食用方便,深受消费者喜爱,但随着工业技术的进步和饮食多样化需求的提高,传统鱼糜制品已不能满足产业发展需求。接种发酵技术通过微生物代谢活动调控鱼糜制品的质地特性、风味轮廓及功能价值,已成为水产加工领域的重要研究方向。本文对现有研究进行探讨,重点分析不同接种菌株(如乳酸菌、酵母菌等)在鱼糜制品质地、风味及益生特性上的调控作用。不同发酵剂对鱼糜制品的影响显著,其效果受发酵条件(如温度、底物配比)的影响。研究表明,接种发酵不仅改善了鱼糜制品的风味,还促进了健康益生特性的形成。此外,本文重点探讨相关酶系及其代谢路径在风味形成过程中的作用,揭示了发酵过程中风味变化的机制,并提供了对发酵过程中微生物相互作用及其产品特性影响的全新视角。本综述对现有研究成果进行梳理,分析影响发酵鱼糜制品质地、风味及功能特性的因素,总结发酵过程中风味动态变化机制,为推动接种发酵鱼糜制品的标准化与工业化应用提供理论依据。

     

    Abstract: Surimi products are favored by consumers due to their high nutritional value, product diversity, and convenience. However, with the advancement of industrial processing technologies and the growing demand for dietary diversification, traditional surimi products are no longer able to meet the evolving needs of the industry. Inoculated fermentation technology has emerged as an important research focus in the field of aquatic product processing, as it regulates the textural properties, flavor profile, and functional value of surimi products through microbial metabolic activities. This review synthesizes existing studies, with particular emphasis on the regulatory effects of different starter cultures—such as Lactobacillus and yeasts—on the texture, flavor, and probiotic properties of surimi products. Various fermentation agents exert significant effects on surimi quality, and their efficacy is strongly influenced by fermentation conditions, including temperature and substrate ratio. Previous studies have demonstrated that inoculated fermentation not only enhances the flavor of surimi products but also promotes the development of health-related probiotic characteristics. Furthermore, this review highlights the roles of key enzymatic systems and their associated metabolic pathways in flavor formation, elucidating the mechanisms underlying flavor changes during fermentation and providing new insights into microbial interactions and their impacts on product characteristics throughout the fermentation process. By integrating current research findings, this review analyzes the major factors affecting the textural, sensory, and functional properties of fermented surimi products and summarizes the dynamic mechanisms of flavor evolution during fermentation, thereby providing a theoretical basis for the standardization and industrial application of inoculated fermented surimi products.
