植物乳植杆菌HYY-S10对发酵香肠理化特性、感官品质和挥发性风味物质的影响

Effects of Lactiplantibacillus plantarum HYY-S10 on the Physicochemical Properties, Sensory Quality, and Volatile Flavor Compounds of Fermented Sausages

  • 摘要: 为研究植物乳植杆菌HYY-S10对发酵香肠理化性质、感官品质及挥发性风味物质的影响,本研究将接种HYY-S10的发酵香肠作为实验组,以自然发酵和接种植物乳植杆菌DMDL 9010发酵的香肠作为对照组。通过调控HYY-S10接种量(以原料肉计,分别为0.0、0.2、0.4、0.6 g/kg),对发酵香肠的理化、感官特性和挥发性风味物质等进行了综合性分析。结果显示,与CK组相比,HYY-S10的添加显著降低了发酵香肠pH和硫代巴比妥酸反应物(TBARS)值(P<0.05),加速了其发酵进程,并展现出较好的抗氧化效果,色泽与质构方面也得到显著改善(P<0.05),关键挥发性风味物质的种类和含量均有所提升,电镜扫描发现,HYY-S10能够有效地破坏肌纤维的完整性。当HYY-S10接种量为0.4 g/kg时,发酵香肠达到最佳综合品质,具体表现为:其pH最低,L*值最大,b*值最小,色泽改善效果最好;活菌数最高,达到8.53±0.04 lg CFU/g;综合感官评分表现最佳。综上所述,HYY-S10是一种具有潜力的发酵剂,能够从多个方面显著提升发酵香肠的综合品质及质量安全性。

     

    Abstract: This study aimed to investigate the effects of Lactiplantibacillus plantarum HYY-S10 as a starter culture on the physicochemical properties, sensory quality, and volatile flavor compounds of fermented sausages. Sausages inoculated with HYY-S10 served as the treatment groups, while naturally fermented sausages and those inoculated with Lactiplantibacillus plantarum DMDL 9010 were used as controls. By varying the inoculation level of HYY-S10 (0.0, 0.2, 0.4, and 0.6 g/kg), a comprehensive evaluation was conducted, including physicochemical analysis, sensory profiling, and volatile flavor compounds characterization. The results indicated that the addition of HYY-S10 significantly (P<0.05) accelerated the fermentation process, as evidenced by a rapid pH drop and reduced thiobarbituric acid reactive substances (TBARS) values, demonstrating its potent acidification and antioxidant capacity. Concurrently, significant improvements (P<0.05) in color and texture parameters were observed. The volatile compound profile was notably enriched, with increased diversity and concentration of key volatile flavor compounds. Scanning electron microscopy further revealed that HYY-S10 effectively disrupted the integrity of muscle fibers. An inoculation level of 0.4 g/kg of HYY-S10 was identified as optimal, yielding sausages with the highest overall quality. These sausages exhibited the lowest pH, the highest lightness (L*), the lowest yellowness (b*), the maximum viable cell count (8.53±0.04 log CFU/g), and the highest overall sensory score. In conclusion, Lactiplantibacillus plantarum HYY-S10 is a promising starter culture that can comprehensively enhance the fermentation efficiency, physicochemical attributes, sensory acceptability, and microbial safety of fermented sausages.
