低GI黑豆全麦饼干配方优化及血糖调节效果研究

Formulation Optimization and Blood Glucose Regulatory Effect of Low-GI Black Bean-Whole Wheat Compound Biscuits

  • 摘要: 本研究旨在开发一种兼具良好适口性和低血糖生成指数(Glycemic Index,GI)的黑豆全麦饼干。通过单因素实验和正交试验,以感官评分和预估血糖生成指数为评价指标,确定饼干最优配方;采用物性分析仪和顶空固相微萃取-气相色谱/质谱联用技术对饼干的感官品质进行解析。通过体外消化和人体血糖测试试验,评价饼干的血糖调节效果。结果表明,黑豆全麦饼干最优配方为:黑豆粉/全麦粉配比20:80、赤藓糖醇12%、植物油14%。并检测到烟酸甲酯、芳樟醇和月桂酸等特征挥发性风味物质,在分子层面佐证了适口性提升的化学基础。优化后的黑豆全麦饼干中抗性淀粉、膳食纤维及多酚类物质含量均显著提高(P<0.05),淀粉水解率下降至40.48%,预估GI值为35.23;经人体试验测定,实际平均GI值为29,属于低GI食品。该研究为超重、肥胖和糖尿病患者制备功能性食品提供了相应参考。

     

    Abstract: This study aimed to develop black bean-whole wheat compound biscuits characterized by enhanced palatability and a low glycemic index (GI) to address prevalent deficiencies in the sensory quality of existing low-GI functional foods. The optimal biscuit formulation was established using single-factor experiments and an orthogonal experimental design with sensory evaluation scores and estimated GI as the key assessment criteria. Sensory quality was assessed using a texture analyzer and headspace solid-phase microextraction coupled with gas chromatography/mass spectrometry. The glycemic response was evaluated using in vitro digestion experiments and in vivo human blood glucose tests. The optimal formulation comprised a black bean flour to whole wheat flour ratio of 20:80, in addition to 12% erythritol and 14% vegetable oil. Characteristic volatile flavor compounds, including methyl nicotinate, linalool, and lauric acid, were identified, providing molecular-level chemical evidence for enhanced palatability. Furthermore, the optimized biscuits exhibited significantly elevated levels of resistant starch, dietary fiber, and polyphenols (P<0.05). Notably, the starch hydrolysis rate decreased to 40.48% with an estimated GI value of 35.23. Human trials had determined an average GI value of 29, classifying it as a low-GI food product. This study provides relevant references for the development of functional foods for overweight, obese, and diabetic individuals.
