藤茶的生物活性及在食品中的应用进展

Ampelopsis grossedentata: The Biological Activities and Applications in Food

  • 摘要: 藤茶富含黄酮类、酚酸类、多糖和氨基酸类等多种生物活性成分,其中二氢杨梅素是其主要功能成分。研究表明,藤茶具有抗炎、抑菌、抗氧化、抗肿瘤、保肝及调节血糖血脂等多种生理活性,同时在食品领域中也展现出良好的应用前景。本文系统阐述了藤茶的生物活性物质及其在抗炎、抑菌、抗氧化等多方面的作用机制,深入解析了其在功能性食品开发、食品保鲜与包装等领域的应用潜力。通过梳理藤茶活性物质的作用机理及在食品中的应用研究进展,明确了其在调节机体免疫、缓解氧化应激、抑制肿瘤细胞增殖、保肝护肝功能及调控糖脂代谢等方面的积极作用,为开发其在保护人体健康和预防慢性疾病等方面的新型健康食品提供了科学依据,同时为藤茶资源的高值化与产业化利用奠定基础。

     

    Abstract: Ampelopsis grossedentata is enriched with multiple biologically functional components, including flavonoids, phenolic acids, polysaccharides, amino acids , and other bioactive components. Dihydromyricetin is one of the key bioactive substances in Ampelopsis grossedentata. Ampelopsis grossedentata possesses various efficacies such as anti-inflammatory, antibacterial, antioxidant, anti-tumor, liver protection, regulation of blood glucose and blood lipids. It also exhibits promising prospects for application in the food field. Furthermore, an in-depth analysis of its application potential in processing fields such as functional food development, food preservation, and packaging is provided. By reviewing the mechanisms of action of the active compounds in Ampelopsis grossedentata and their research progress in food applications, this review clarifies their positive effects in regulating immune function, alleviating oxidative stress, inhibiting tumor cell proliferation, protecting liver function, and modulating glucose and lipid metabolism. This provides a scientific basis for the development of new healthy foods in protecting human health and preventing chronic diseases, while also laying a theoretical foundation for the high-value and industrial utilization of Ampelopsis grossedentata resources.
