不同贮藏温度下绿豆汤红变对其功能组分、生物活性及感官品质的影响

Effects of Reddening in Mung Bean Soup Stored at Different Temperatures on Its Functional Components, Biological Activity and Sensory Quality

  • 摘要: 绿豆汤作为我国具有“清热解暑”功效的传统饮品,富含酚类物质,具备良好的抗氧化与抗炎活性,但极易发生红变。目前,关于绿豆汤红变后,其生物活性组分、功能活性和感官品质的变化尚不明确。为此,本研究系统考察4 ℃、20 ℃和37 ℃三种不同贮藏温度条件下绿豆汤发生红变后,色度、酸度、酚类物质组成和含量、抗氧化能力、抗炎活性及感官品质的变化规律。结果表明,贮藏温度的升高会加速绿豆汤的红变,且对其功能活性和感官品质的影响更为显著。相比于新鲜绿豆汤,不同贮藏温度下的绿豆汤均发生了红变现象。37 ℃贮藏组变化最明显,其红绿色度a*值较新鲜组上升了110.05%,亮度L*值下降了19.60%。大多数活性组分随红变程度加剧而发生显著降低,在37 ℃条件下,总酚、总黄酮及缩合单宁含量分别下降了18.27%、16.77%和59.36%;关键活性成分牡荆素和异牡荆素含量分别仅保留了40.39%和35.69%。受此影响,FRAP抗氧化能力与胰蛋白酶抑制剂活性最高分别下降了42.78%和27.78%。感官评价结果进一步表明,红变的发生显著影响了绿豆汤的色泽、香味、滋味与口感。研究结果可为传统消暑饮品的精准加工与营养保持提供基础科学依据,有助于推动绿豆汤的高品质化生产。

     

    Abstract: Mung bean soup (MBS), as a traditional Chinese beverage renowned for its efficacy in "clearing summer heat," is rich in phenolic compounds and possesses significant antioxidant and anti-inflammatory activities. However, it is highly susceptible to reddening. Currently, the changes in bioactive components, functional activities, and sensory qualities associated with the reddening of MBS remain insufficiently understood. Therefore, this study systematically investigated the variations in chromaticity, acidity, phenolic composition and content, antioxidant capacity, anti-inflammatory activity, and sensory quality of MBS following reddening under three different storage temperatures(4 °C, 20 °C, and 37 °C).The results indicated that elevated storage temperatures accelerated the reddening process of MBS and exerted a more significant impact on its functional activities and sensory quality. Compared with fresh MBS, samples stored at all temperatures exhibited reddening. The group stored at 37 °C showed the most distinct changes, with the redness value (a*) increasing by 110.05% and the lightness value (L*) decreasing by 19.60% when compared with the fresh group. Most of bioactive components decreased significantly as the reddening intensified. Under 37 °C storage, the contents of total phenolics, total flavonoids, and condensed tannins decreased by 18.27%, 16.77%, and 59.36%, respectively. Furthermore, the retention rates of key bioactive components, vitexin and isovitexin, were only 40.39% and 35.69%, respectively. Consequently, the FRAP antioxidant capacity and trypsin inhibitor activity decreased by up to 42.78% and 27.78%, respectively. The results of sensory evaluation further demonstrated that the occurrence of reddening significantly influenced the color, aroma, taste, and mouthfeel of MBS. These findings provided a fundamental scientific basis for the precision processing and nutrient preservation of traditional summer beverages, contributing to the high-quality production of MBS.
