复热方式对预制梅菜扣肉品质的影响

Effects of Reheating Methods on the Quality Attributes of Pre-prepared Steamed Pork with Preserved Vegetables

  • 摘要: 梅菜扣肉已逐渐实现标准化生产。为了使其以预制菜的形式更好地满足市场需求,保障复热后食用的品质,本研究对比了在微波与蒸汽两种复热方式下,预制梅菜扣肉于4 ℃贮藏1、3、6、9 d后的持水率、色泽、质构及风味物质的变化规律。结果表明,在贮藏过程中,微波复热组样品的持水率相对稳定,而蒸汽复热组的色泽变化更为稳定。微波复热组样品贮藏6 d或9 d后的硬度、回复性和咀嚼性显著高于蒸汽复热组(P<0.05),且弹性更差。微波复热组的风味物质变化波动大,样品在贮藏6 d并经过微波复热(D6W)后,异戊醛的OAV由第3 d的未检出骤升至380.25,对甲氧基苯甲醛的OAV值由贮藏1 d时的未检出增至1004.60,而脂质氧化标志物(E,E)-癸二烯醛仅在微波组中被检出。此外,微波复热组中d-柠檬烯、β-石竹烯、4-烯丙基苯甲醚的含量几乎高于蒸汽复热组,但其随贮藏时间的变化规律不明显,且波动大。相比之下,蒸汽复热组的风味物质变化较为平缓。因此,采用蒸汽复热手段处理预制梅菜扣肉优于使用微波复热方式。本研究可为预制梅菜扣肉食用前复热方式提供选择依据和科学建议,同时也为预制菜产品的工业化生产和高品质新产品的开发提供理论参考。

     

    Abstract: As the production of Pre-prepared Steamed Pork with Preserved Vegetable becomes increasingly standardized, maintaining product quality after reheating is essential to meet rising consumer demand for convenient, ready-to-eat meals. This study systematically evaluated and compared the impacts of microwave versus steam reheating on key quality attributes—including water-holding capacity (WHC), color, texture, and volatile flavor compounds—following refrigerated storage (4 ℃) for 1, 3, 6, and 9 days. Results revealed that microwave-reheated samples exhibited relatively stable WHC retention throughout storage, whereas steam-reheated samples demonstrated superior color stability. The hardness, resilience and chewiness of samples in the microwave reheating group were significantly higher than those in the steam reheating group after 6 or 9 days of storage (P<0.05), with a lower springiness observed for the former. Flavor profiling further revealed greater fluctuations in volatile compounds under microwave reheating. After 6 days of storage followed by microwave reheating (D6W), the odor activity value (OAV) of isopentanal in the samples surged from non-detectable on day 3 to 380.25, and that of p-methoxybenzaldehyde increased from non-detectable on day 1 of storage to 1004.60. Notably, (E,E)-decadienal, a characteristic marker for lipid oxidation, was exclusively detected in the microwave reheating group. In addition, the contents of d-limonene, β-caryophyllene and 4-allylanisole in the microwave reheating group were almost all higher than those in the steam reheating group, while their variation trends over storage time were not obvious and showed large fluctuations. In contrast, flavor changes in steam-reheated samples were more gradual. Therefore, steam reheating is recommended over microwave reheating to better preserve the quality of Pre-prepared Steamed Pork with Preserved Vegetable. This study provides a scientific basis for reheating method selection and provides practical guidance for the quality optimization of prepared dishes.
