火锅底料品质提升研究进展

Research Progress on Quality Improvement of Hotpot Base

  • 摘要: 火锅作为一种广受欢迎的烹饪方式,其核心成分火锅底料在日常烹饪中占据重要地位。市售火锅底料含有较多油脂与钠盐,长期摄入易带来安全健康隐患,同时消费者对食品健康与饮食多样性的需求日益提高,火锅底料的加工生产亟待向更加健康、多元化及营养化的方向发展。本文主要综述了火锅底料的典型风味物质和风味改善途径,总结了火锅底料中的油脂替代技术,并从减盐结合咸味感知增强方面探讨了火锅底料减盐不减味的研究进展。本文旨在为大健康背景下火锅底料产品的生产研发提供参考资料。

     

    Abstract: As a widely popular cooking method, the core ingredient of hot pot, namely the hotpot base, plays a crucial role in daily cooking. Long-term consumption of hotpot base can lead to potential safety and health risks, since marketable hotpot base generally owns high contents of oil and sodium salt. Concurrently, rising demands for food health and dietary diversity of consumers are gradually increasing, thus impelling the development of processing and production for hotpot base toward a more healthy, diversified, and nutritious way. This review expounds the typical flavor compounds found in hotpot base and outlines current strategies for flavor enhancement. The oil substitution technologies in hotpot base have also been discussed, as well as the research progress on reducing salt content while maintaining hotpot base flavor by combining reducing salt and with enhancing the perception of saltiness. This paper aims to provide valuable references for research and development efforts focused on creating healthier hotpot base products within the broader context of public health and wellness.
