基于多元统计分析的不同等级干香菇品质评价

Quality Evaluation of Different Grades of Dried Shiitake Mushrooms Based on Multivariate Statistical Analysis

  • 摘要: 为探究不同等级干香菇品质差异,以弥补传统分级与内在品质脱节的不足,并为香菇精准化精深加工原料的筛选提供参考,本研究以湖北省香菇主产区的43个不同等级(3A、2A、A、B、C、D)干香菇为研究对象,对其中水分、蛋白质、氨基酸、脂肪、多糖、膳食纤维和锌含量进行检测、比较和相关性分析,并运用聚类分析及主成分、熵值法和秩和比法分析对6个等级香菇进行综合评分。结果表明,水分、蛋白质、多糖、膳食纤维和锌5个因素间存在显著或极显著相关性,不同等级干香菇品质指标含量虽有差异但都具有高蛋白(>20%NRV)、低脂肪(<3 g/100 g)的特点,且富含膳食纤维(>6 g/100 g)和锌(>30%NRV),必需氨基酸种类齐全,3A级菇还在多糖含量上有优势,平均值>10%。统计分析评价结果显示,B级和D级菇综合品质较优,尤其是B级菇。因此,可将B级和D级菇作为干香菇精深加工的优选原料,而3A级菇可作为香菇多糖类深加工产品定向开发的专用原料。

     

    Abstract: This study aimed to explore the quality differences among different grades of dried shiitake mushrooms (Lentinula edodes), so as to make up for the disconnection between traditional grading and intrinsic quality, and provide a reference for the screening of raw materials for precise and intensive processing of shiitake mushrooms. A total of 43 dried samples of different grades (3A, 2A, A, B, C, D) from major shiitake mushroom producing areas in Hubei Province were taken as the research objects. The contents of moisture, protein, amino acids, fat, polysaccharides, dietary fiber, and zinc in them were detected, compared and subjected to correlation analysis. Additionally, cluster analysis, principal component analysis, entropy method, and rank-sum ratio method were used to conduct a comprehensive score for the 6 grades of shiitake mushrooms. The results showed that there were significant or extremely significant correlations among 5 factors, namely moisture, protein, polysaccharides, dietary fiber and zinc. Although the contents of quality indicators of different grades varied, they all had the characteristics of high protein (> 20% NRV), low fat (< 3 g/100 g), and being rich in dietary fiber (> 6 g/100 g) and zinc (> 30% NRV), with complete types of essential amino acids. Grade 3A mushrooms also had an advantage in polysaccharide content, with an average value > 10%. The results of statistical analysis and evaluation showed that Grade B and Grade D mushrooms had better comprehensive quality, especially Grade B. Therefore, Grade B and Grade D mushrooms can be used as the preferred raw materials for intensive processing of dried shiitake mushrooms, while Grade 3A mushrooms can be used as special raw material for the directional development of deep-processed products of shiitake mushroom polysaccharides.
